Healthy Vegan - Easy Patatas Bravas with vegan Chorizo, Red Pepper and Peas

Image
I am going to tell you something about myself whether you want to know it or not.  I don't like new potatoes that much.  I find them a bit dull, unless dressed up in a potato salad or cooked this this, pan-fried or roasted in the oven.   I made this Spanish style dish of Patatas Bravas last week after coming back from  Hay on Wye For those of you who read my blog regular, what I didn't tell you in that blog post was we had a light lunch at a little tapas place - I am not food blogger who reviews, but it was fine - we had string beans in tomato sauce, halloumi, traditional and beetroot hummus, good bread and olive oil for dipping and a side of olives.  D said you should do this kind of tapas style food more often, its easy peasy.   That evening when I got home, I flicked through my heavy copy of  1080 Recipes  republished in 2007 , a cookbook that was hailed as the bible of traditional Spanish cooking since it was first published over 3...

Healthy Vegan - Little Red Bottle of Annatto Achiote Oil

Image
Since picking up a copy of vegan Chorizo  sausages recipe.   Her newer cookbooks Salad Samurai and Protein Ninja are on the wish list too, but I still find myself dipping into Viva Vegan now and again, and did so recently with her Veneuzuelan Black Beans .   However, the last time I made the vegan chorizo sausages was when I was on my vegetarian adventure and I made what had become a popular dish on the menu Chorizo, potato Quesadilla's, but haven't made any since as I struggled to find vital wheat gluten in Wales.  But now I am able to find some as most independent places that stock vegetarian and vegan ingredients sell vital wheat gluten.  My trouble now is getting hold of annatto seeds, also known as achiote seeds for making  Achiote oil.   Achiote oil is not hard to make, the hardest part is acquiring achiote seeds. When I lived in Glasgow I was able to pick this up at Lupe Pintos in the West End, but now I live in the Welsh valleys, I love it ...

Healthy Vegan - Whole Fava Beans Stew with Peppers

Image
August has brought us high winds and rain and a wanting for bowl food . Have you ever had whole fava beans?  If whole fava beans had a personality, it would be the fictional character Fonzie from the American sitcom Happy Days biker in a leathery rugged jacket, all tough on the outside - but a sweetheart on the inside.   So h ere is my second recipe with whole fava beans still in their handsome jackets.  The last recipe I made with whole fava beans was  Somalian Fava Beans  and they were utterly delicious.  Anyway, as the fava beans were bubbling away in the pot, it struck me that it was just a bowl of brown beans and not particularly appealing, looking a bit plain.  I decided to throw in a red and yellow pepper just to give it more colour.  It worked visually.  However, taste and flavour wise this Fava Bean Stew was okay, yes just okay.  Although it made for a pleasant change from spicy stews, I still prefer spicy stews or...

Healthy Vegan - Easy Summer Chia Hibiscus Cooler

Image
Ah its the start to the weekend and in contrast to the past couple of days that called for bowl food, this late afternoon the sun has come out all shining with an invitation to go out, doss and sit in the garden sipping something to welcome that chillax (chill and relax) Friday Feeling. Today for the crazy kids we have non-alcoholic cocktails aka mocktails and coolers .  This is no ordinary cooler, it is made from edible flowers and chia seeds.  This is a refreshing and lovely tasting still drink with a fantastic colour and a gentle sweetness.  I  had half expected the chia seeds to be suspended in the air, but they sunk to the bottom.  I am sharing this with     Sunday Fitness and Food Fitness  hosted by  Marathons and Motivation  and  Ilka's blog ;   and Munchies and Munchkins for  Eating Al Fresco  as I drunk one of these bottles of Summer Chia Hibiscus Cooler in the garden whilst weeding and picking some...

Healthy Vegan - Bakers Dozen: Savoury Strawberry Recipes

Image
We Brits are very reserved with our strawberries come the Summer season.   We love mostly to make jam with our British strawberries so that we can slather it on our homemade scones.  Come Wimbledon - it becomes fashionable to indulge in Strawberries and Cream or the more traditional Eton Mess.   Well for a change and in the name of  culinary and cultural diversity, I recently decided to make a Strawberry Curry and it got me thinking about other savoury strawberry recipes.  Strawberries in a savoury dish?!  Its actually not as terrible as you may think.  Imagine a strawberry a bit like a cherry tomato.  Its not always sweet, sometimes sharp too or sometimes both.  Perfect for Goats cheese or Mozzarella Toasted Panini, or on a Bruschetta.   Here are twelve Savoury Strawberry vegetarian and vegan recipes from around blogosphere.    Strawberry, Avocado and Walnut Salad  from the magnificent Green Gourmet Giraffe St...

Healthy Vegan - vegan Strawberry, Tomato and Puy Lentil Curry

Image
Yes, we have had  Japan that actually sells Strawberry Curry, but it comes in a packet. I assure you this one is home made and not fruity sweet at all.  It made for a nice change from the traditional Indian style Dal.  You can even eat this curry as a Soup or stew if you want, its quite versatile.  If you don't have Puy lentils feel free to substitute it with green lentils. For more unusual Rhubarb Curry ,  Japan that actually sells Strawberry Curry, but it comes in a packet. Healthy Vegan - Lemon Velvet 'Marrow Cream' Curd

Image
Wondering what to do with those monster marrows other than stuffing them with brown rice, quinoa and other grains.  Here's something that will last in your kitchen larder (if your fortunate to have one); or if your heart desires share with family, friends and Besties.   It will compliment toasts,  crumpets and even croissants.   If you have not heard of it, let me introduce you to a different type of curd made without eggs Marrow Cream.  This is is no ordinary Marrow Cream, this recipe was bestowed to me (and other fellow bloggers but I won't say that too loudly) by one of my long term friend  Nic from Nip It In The Bud  who I met through blogging.  We started blogging around the same time and I have watched her and her husband grow from a loving couple into a blossoming family, first there was little Euan and now there is Luca.   A few years ago, when I was a lot more proactive in the allotment garden, I would make a lot of homemade jam...
