Healthy Vegan - Courgette Marrow Aubergine and Spicy Ground Chorizo Pizza
I made this Courgette Marrow Aubergine Spicy Ground Chorizo Pizza a few weeks back. It is a little reminisce of Lahmacan. dubbed in the English speaking world as the Turkish Pizza, but of course this one is vegetarian as it is made with soya mince in place of minced meat.
I really, really loved it.
The base is not traditional tomato, but spicy ground chorizo made with soy mince and all the flavours associated. It was a little old fashion way of making vegan chorizo, but it was delicious and I will make it again . The courgettes in this recipe were bordering on becoming marrows, hence the reason that I have named the recipe so.

I did not use all of the Spicy ground chorizo, some of it was used in tacos stuffed with roasted sweet potatoes and over jacket potatoes .
Here is the way I made the Courgette - Marrow Aubergine Chorizo Pizza
For the spicy ground chorizo follow the recipe from here.
On you homemade or shop bought pizza base spread the spicy ground chorizo.
Lay the raw thinly sliced marrows over the top.
Lay roasted aubergine pieces on top

Scatter over with cheese or vegan alternative and top of with optional additional slices of courgettes and or marrow.
Drizzle with a little chilli flavoured oil oil
Season with salt and pepper.
Bake until the pastry is golden.
Slice and enjoy.

As a vegetarian I do like the cookbook, but I am a little confused as it doe snot come across as a vegan cookbook. For example, one of the first recipes for Hochata requires butter and milk, and other mentioning chicken stock, but the cookbook does not highlight what the vegan substitutes are or how to adapt the recipe. It is only when you get to page 21 that you find the substitutes. It does not bother me as it a bit like my own food blog that is mostly vegetarian and can often be made vegan, but if you are a dedicated vegan - I think you may feel slightly misled. As a vegetarian, I was not disappointed at all.
